FRENCH COUNTRY STEW 
1 lb. salt pork or bacon
2 doz. sm. onions (or 1 jar)
3-4 lbs. lean beef
2 (8 oz.) cans tomato sauce
2 beef bouillon cubes
2 c. water
6 whole cloves
3 cloves garlic
1 bay leaf
2 doz. peppercorns
1 tsp. thyme
Potatoes, carrots, mushrooms, other vegetables
Optional: 1 c. red wine

Saute salt pork in Dutch oven. Add onions and saute. Remove salt pork and onions from pan and save. Brown meat in drippings. Return salt pork and onions to pan. Combine all remaining ingredients except vegetables in another pot and bring to a boil.

Pour hot mixture over meat in Dutch oven. Add vegetables and wine if desired. Simmer AT LEAST 4 hours.
