QUICK EGGPLANT ITALIANO 
1 eggplant, sliced thin
1 or 2 eggs, beaten
Seasoned bread crumbs
1 lg. ball Mozzarella cheese, grated
Parmesan cheese, grated
2 c. Italian style tomato sauce
2 tbsp. olive oil

Add olive oil to hot skillet. Dip eggplant in egg mixture, then in crumbs. Fry both sides until golden. Place on paper towels to drain. Put a little tomato sauce on bottom of 9 x 13 inch baking dish. Layer eggplant, Mozzarella, Parmesan, and sauce, ending with sauce. Bake at 350 degrees for 30 minutes. Serve with salad and garlic bread.
