ZUCCHINI RAISIN MUFFINS 
2 c. whole wheat flour
3 tsp. baking powder
1 tsp. ground cinnamon
1/4 tsp. salt
2 eggs
3/4 c. milk
1/3 c. vegetable oil
1/4 c. honey
1 c. grated zucchini
2/3 c. raisins
1/3 c. chopped walnut or pecans

TOPPING (optional) :

4 tsp. ground cinnamon

Line medium (about 2 1/2 inch) muffin cups with foil or paper liners. In small mixing bowl, combine flour, baking powder, cinnamon and salt. In large mixing bowl, combine eggs, milk, oil and honey; beat until well mixed. Fold in flour mixture, zucchini, raisins and nuts. Stir gently. Spoon batter into muffin cups, filling almost full.

FOR TOPPING (optional) : Combine sugar and cinnamon. Sprinkle topping over muffins. Bake in preheated 300 degree oven about 20 minutes or until golden brown. Serve warm. Yield: 12 to 15 muffins.
