FAT FREE ZUCCHINI MUFFINS 
3 eggs or egg substitute
1 c. sugar
1 c. applesauce
1 1/2 tsp. vanilla
2 c. grated zucchini
3 c. flour
1/2 tsp. salt
1 tsp. baking soda
1/2 tsp. baking powder
1-2 tsp. cinnamon
2 c. chopped dates or raisins
1 c. chopped pecans or walnuts

Beat eggs until light and fluffy. Add sugar and applesauce. Add zucchini and vanilla. Add dry ingredients and blend. Add dates or raisins and nuts. Fill greased muffin tins or liners. Bake at 325 degrees for 30-40 minutes.
