B.'S BEAN CAKES | |
1 (15 oz.) can pinto or Great Northern beans (or use same amount of leftover beans) 1 sm. onion, diced fine 8 Saltine crackers, crushed fine 2 heaping tbsp. flour Salt & pepper to taste (you can add any spices desired such as sage, oregano, hot pepper) Mix all ingredients together and spoon into hot Crisco (or any desired fat or oil) approximately 2 tablespoons per cake. Fry until golden brown on both sides and done in middle. (Makes approximately 6 cakes.) Good served with ham or bacon and fried potatoes. |
