JAPANESE SWEET BEAN CAKE 
1 c. pancake mix
3 oz. milk
2 eggs
1 can cooked Azuki Beans with sugar

Beat eggs, add milk and pancake mix. Cream until the batter is smooth. Grease heated skillet with vegetable oil and pour in 1/8 of the batter to cover the bottom. When golden brown underneath, turn over to cook top lightly.

Put cooked beans into a pan and heat, stirring gently until water evaporates. Place beans between 2 pieces of puff and wrap tightly in plastic wrap or Baggie. Leave for 10 minutes.
