BROCCOLI SOUFFLE 
1 c. cooked, chopped broccoli
3 tbsp. butter
1 tbsp. onion, minced
3 tbsp. flour
1/2 c. milk
1/2 c. cream
3 eggs, separated
1/2 c. cheddar cheese
Pinch of salt, paprika & nutmeg

Melt butter; add onions; stir in flour; slowly add milk and cream; let boil. Add chopped broccoli; heat again and add egg yolks and cook 1 minute. Season with spices and cheese. Beat egg whites until stiff and fold into broccoli mixture. Pour into a greased souffle dish. Bake in pan of water 45 minutes at 325 degrees. Can be prepared ahead and baked later.
