TURKEY-HAM MINESTRONE 
1/4 lb. bacon, diced
1/2 lb. turkey ham, diced
1 lg.onion, chopped
2 cloves garlic, mashed
1 (16 oz.) can tomatoes
1 (10 3/4 oz.) can bean & bacon soup
1 (10 3/4 oz.) can beef broth
1 1/2 c. chopped carrots
1 c. chopped celery
1 c. chopped cabbage
1/2 c. green beans or peas
1 c. spaghetti, broken in pieces
1/4 c. minced parsley or 2 tbsp. dry parsley
1 tsp. dry sweet basil
Tomato juice, if needed OR water
Salt & pepper
Freshly grated Parmesan cheese

Fry bacon until transparent. Add turkey ham, onion and garlic. Saute, stirring constantly. Add tomatoes, bean & bacon soup, beef broth, celery, carrots, cabbage, green beans or peas, spaghetti, parsley and basil. Simmer until vegetables are tender, 20-30 minutes. Adding water to tomato juice if soup is too thick. Taste and add more salt, if needed. Yields 3 quarts.
