HAMBURGER AU POIVRE 
1 lb. lean ground beef
4 tsp. cracker or coarsely ground black pepper
Salt
1/2 c. beef broth
1 tbsp. chopped parsley
1 tsp. lemon juice
1/4 tsp. Worcestershire sauce
Few drops of Tabasco sauce (optional)

Shape ground beef into four 1/2-inch thick burgers; place on a small baking sheet. Press 1/2 teaspoon of the pepper into each side of the burgers. If possible, cover and refrigerate 30 minutes.

Heat a large skillet over moderately high heat. When hot, sprinkle skillet with salt and add burgers. Cook 3 to 4 minutes, until well- browned on bottom; turn and cook 3 to 4 minutes longer for medium. (For well-done, cook about 2 minutes longer per side.)

Meanwhile, mix remaining ingredients in a small saucepan and bring to a boil over moderate heat. Transfer burgers to a serving plate and top with the parsley sauce.

Makes 4 burgers and 1/2 cup sauce. For diet serving allow 1 burger and 2 tablespoons sauce.
