HALIBUT STEAKS AU POIVRE 
1 lb. halibut steaks, 1/2 inch thick
Salt
1 1/2 tbsp. coarsely ground mixed peppercorns

Leave the steaks at room temperature for 10 minutes while the skillet heats. Set a large, well seasoned cast iron skillet over medium heat and let it heat slowly for about 10 minutes, or until a drop of water sizzles at once. With your fingers, press the pepper mixture deeply into both sides of the fish. Sprinkle the skillet with salt and heat briefly before easing the steak into the pan. Cook for 2 to 3 minutes, turn over and cook for another 2 to 3 minutes or until done. Serve garnished with lemon slices and parsley. Serves 2 to 3.
