MUSTARD-TOPPED HALIBUT STEAKS 
4 sm. halibut steaks, 1" thick
1/2 tsp. salt
1/8 tsp. pepper
2 tbsp. butter, melted
2 egg whites, beaten
1/4 c. Parmesan cheese, grated
2 tbsp. Dijon style mustard
2 tbsp. green onions, chopped with tops

Sprinkle fish steaks with salt and pepper. Place fish on rack in broiler pan. Brush with 1 tablespoon butter. Broil with fish 2 to 3 inches from heat until light brown, about 5 minutes. Turn. Brush with remaining butter. Broil until fish flakes easily, 5 to 8 minutes. Beat egg whites until stiff but not dry. Fold in cheese, mustard and onions. Spread mixture over fish. Broil until tops are golden brown.
