EGG FOO YOUNG 
2 c. cooked rice
2 c. cubed, cooked pork
6 lg. eggs, beaten
1/2 tsp. salt
1/2 tsp. pepper
1/2 c. chopped onion
1 can drained bean sprouts (I like crunch of fresh)

Mix all the above together. Use a large cooking spoon to ladle mixture into a lightly oiled frying pan. Let it brown on one side before turning. When brown, lift from pan. It will be like a pancake. Keep warm, while you continue to fry the rest of mixture. Serve with brown gravy and soy sauce over rice. Cut recipe in half for small family.
