BAKED RICE PUDDING 
1 c. water
1/2 c. uncooked rice
3/4 c. sugar
1 tbsp. cornstarch
2 eggs
2 1/2 c. milk
1 tbsp. lemon juice
1/2 c. raisins
Shortening

Bring water to boil; add rice. Reduce heat. Cover and simmer 14 minutes. Do not stir. Preheat oven to 350 degrees. Mix sugar and cornstarch in large bowl. Beat eggs and milk in different bowl. Add to sugar and cornstarch mixture. Stir in rice, lemon juice, raisins. Pour into greased 1 1/2 quart baking dish. Place baking dish in pan of very hot water 1 inch deep. Place in oven. Bake 1 1/2 hours, stirring occasionally.
