SOUR CREAM RAISIN PIE 
1 egg or 2 egg yolks, lightly beaten
1 c. sour cream (or buttermilk)
1 tbsp. cider vinegar
3/4 c. sugar
2 tbsp. flour
3/4 tsp. cinnamon or allspice
1/2 tsp. nutmeg
1/4 tsp. salt
2 c. seedless raisins
Pastry for a 9 inch single crust pie, unbaked

Combine first 3 ingredients. Stir in sugar mixed with flour, spices and salt. Add raisins. Pour into pastry lined pie pan. Bake in a very hot oven (450 degrees F.) for 10 minutes, then reduce heat to moderate oven (350 degrees F.) and bake 30 to 35 minutes longer or until crust is brown. Serve slightly warm.
