ORANGE ALMOND SALAD 
1/4 c. salad oil
2 tbsp. sugar
4 tbsp. cider vinegar
1/4 tsp. salt
1/8 tsp. almond extract
6 c. torn mixed greens (Romaine is a good choice)
2 cans mandarin oranges, drained
1 c. sliced celery
2 tsp. sliced green onions
1/3 c. toasted slivered almonds

In a screw top jar, combine oil, sugar, vinegar, salt and extract. Cover and shake well to dissolve sugar and salt. Chill. At serving time in a large salad bowl, combine greens, oranges, celery and onion. Sprinkle with almonds. Pour on dressing and toss gently to coat. Serve at once. 6-8 servings.
