ONE DISH MEATLOAF AND MASHED
POTATOES
 
1 lb. ground beef
4 oz. drained mushrooms (optional)
1 egg
1/3 c. chopped onion
1/4 c. dry bread crumbs
1 tsp. salt
1/4 tsp. pepper
3 tbsp. milk
1/2 lb. Velveeta cheese, cubed
1 tbsp. chopped parsley
1/4 tsp. salt
2 c. cooked diced potatoes

Combine first seven ingredients; mix lightly. Press meat mixture into bottom and sides of a 9 inch pan. Bake for 15 minutes at 400 degrees. Mash potatoes with milk, stir in cheese cubes, parsley and salt. Remove pan from oven and reduce temperature to 350 degrees. Drain grease from meat and spread potatoes over meat. Bake for 10 minutes. NOTE: Can substitute seasoned salt for salt and pepper. Can substitute cheddar cheese for Velveeta.
