ICE GREEN TOMATO PICKLE 
7 lbs. very green tomatoes
3 c. plain lime
5 lbs. sugar
3 pt. vinegar
3 tbsp. pickling spice

Slice tomatoes about 1/8-inch thick and soak 24 hours in a solution of 2 gallons of water and 3 cups plain lime. Drain and soak in cold water four hours, changing water each hour.

Make a syrup of the sugar and vinegar and pour over tomatoes. Let stand overnight. Then boil the tomatoes and syrup together for 1 hour, adding a bag filled with spices. If you like, add a few drops of green food coloring while boiling.
