ZUCCHINI BREAD 
2 c. grated zucchini (round hole on grater)
3 c. flour
2 c. sugar
1 c. vegetable oil
1 c. walnuts, chopped
3 eggs, beaten
1 tsp. baking soda
1/2 tsp. baking powder
3/4 tsp. nutmeg
1 tsp. cinnamon
3 tsp. vanilla
1/2 tsp. salt

Beat eggs and sugar; add oil, nuts and zucchini. Sift dry ingredients and add to above mixture. Grease and flour 2 or 3 (small) loaf pans. Bake at 350 degrees for 60 to 70 minutes.
