ZUCCHINI SOUFFLE 
2 c. grated zucchini
1/2 c. Bisquick
2 eggs
1 c. grated sharp Cheddar cheese
1/4 c. oil
1 tbsp. parsley flakes
Salt, pepper, pinch of garlic to taste

Mix together and pour into oiled casserole dish. Top with Parmesan cheese and paprika. Bake at 350 degrees for 25-30 minutes.
