OATMEAL FUDGE BARS
1 c. butter, room temperature (2 sticks)
2 c. light brown sugar
2 eggs
3 c. rolled oats
2 tsp. vanilla
1 tsp. baking soda
1 tsp. salt
1 c. walnuts, chopped
1 (14 oz.) can sweetened condensed milk
1 (12 oz.) pkg. semi-sweet chocolate chips
1 1/2 c. walnuts, chopped
2 tbsp. butter (1/4 stick)
2 tsp. vanilla
1/2 tsp. salt

Generously grease 10 x 15 x 2 inch baking pan. Cream 1 cup butter with sugar. Add eggs one at a time, beating well after each addition. Mix oatmeal, flour, vanilla, soda, salt, and walnuts. Set aside.

Combine milk, chocolate chips in double boiler over hot water. Stir until the chocolate melts. Add walnuts, butter, vanilla, and salt.

Spoon 2/3 of oats mixture into pan. Compact with fork. Spread chocolate mixture over top. Crumble remaining oat mixture and spread with a fork.

Bake at 350 degrees for 25-30 minutes. Cool.

You can also use shredded coconut sprinkled between the layers. You can use butter rather than butter. More nuts can be put between layers.
