STUFFED APPLE SALAD | |
4 dessert apples 2 stalks celery, finely sliced 4 walnut halves for garnish DRESSING: 2 tbsp. heavy cream 2 tbsp. lemon juice 1 tsp. sugar 1/2 clove garlic, crushed Salt Freshly ground black pepper Soak the celery in a bowl of ice water. Wipe the apples with a damp cloth and polish them. Slice off the tops and cut out as much of the flesh as possible without breaking the skin. Discard the seeds and cores. Chop the flesh and put it in a bowl. Drain and dry the celery, add to apples, and mix well. Stir in cream, lemon juice, sugar, garlic and the seasonings together. Pour over the apple and celery mixture and toss carefully until the salad is well coated with dressing. Spoon mixture into apples and place a walnut half on the top of each one. |
