APPLE CUP CAKES 
1/2 c. shortening
1 c. firmly packed sugar
1 egg
1/2 c. chopped raisins
1/2 c. broken pecans
2 c. sifted all-purpose flour
1/2 tsp. salt
1/2 tsp. baking soda
1 tsp. cinnamon
1 tsp. vanilla
1 c. finely chopped raw apples

Cream shortening and sugar until light and fluffy. Add egg; beat well. Stir in raisins and pecans. Mix and sift flour, salt, baking soda, and spices and add alternately with vanilla. Stir in apples.

Fill well-greased muffin pans 2/3 full. Bake at 350 degrees for 30 minutes. Makes 10 to 12 cup cakes. If desired, frost with confectioners sugar icing to which a little cinnamon has been added.
