SPINACH AND RICE CASSEROLE 
1 egg
1/2 c. Cheddar spreadable cheese (I use Shedd's Country Crock Cheddar)
1 (10 oz.) pkg. frozen chopped spinach, thawed and drained
2 c. cooked rice
1/2 c. chopped onion
1/4 tsp. nutmeg
1/2 tsp. salt
Pepper to taste
1/2 c. spreadable cheese, melted

Heat oven to 350 degrees. In medium bowl, beat egg. Add cheese by spoonful. Do not blend. Add remaining dry ingredients to rice and spinach. Coat a 1 1/2 quart baking dish with the additional melted cheese. Spoon mixture into dish. Smooth top. Cover and bake 30 minutes.
