SOUTH - OF - THE - BORDER
CASSEROLE
 
1 sm. chopped onion
2 tbsp. butter
1 (6 oz.) pkg. corn chips (4 c.)
2 c. grated sharp cheddar cheese
1 (1 lb.) can chili without beans
1 (1 lb.) can kidney beans
1 (12 oz.) can Mexicorn (whole)

In 2 quart glass casserole melt butter 30 seconds. Saute onion 3 minutes, stirring once. Reserve 1 cup corn chips and 1 cup cheese. Combine remaining chips, cheese, chili, beans, and corn with onions. Blend ingredients and cook 9 minutes, turning one-fourth turn every 3 minutes. Sprinkle with reserved cheese and cook 3 minutes, turning one-fourth turn after 2 minutes. "Ring" remaining corn chips around edge. Rest 5 minutes. Serves 8.
