SEAFOOD GUMBO 
2 lg. onions
3 stalks celery
1 green pepper
5 okra
3 cloves garlic
4 tbsp. bacon fat
1 lb. raw shrimp, peeled
1 cooked chicken breast, cubed
1 lb. cooked beef, cubed
1 lb. cooked ham, cubed
1 lb. cooked pork, cubed
1 lb. crabmeat
3 lg. tomatoes
Boiling water
1 (6 oz.) tomato paste
1 bay leaf
1/4 tsp. thyme
1/4 c. parsley
1 tbsp. file powder
2 c. cooked rice

Peel and chop onions. Rinse celery and green pepper. Chop. Slice okra. Peel and mince garlic. Heat bacon fat in deep iron kettle. Saute all vegetables. Stir in shrimp, chicken, other meats and crabmeat. Peel and seed tomatoes. Chop and place in kettle. Add boiling water to cover ingredients. Stir in paste, bay leaf, thyme and pepper to taste. Cover kettle and simmer 1 hour. Add water if too thick. Stir in parsley and file. Add rice. Serve immediately.
