TAPIOCA PUDDING 
4 c. milk
1/2 c. sugar
2 eggs, separated
1/4 tsp. salt
1/3 c. tapioca
1 tsp. vanilla

In large saucepan, heat 3 1/2 cups milk. Meanwhile, beat egg yolks in 1/2 cup milk with fork; add 1/4 cup sugar, salt, and tapioca. In large bowl, beat egg whites stiff; gradually add 1/4 cup sugar, beating constantly. Set aside. Add tapioca mixture to hot milk and bring to boil (medium heat), stirring constantly. Add vanilla and remove from heat. Secret of good tapioca: Add hot mixture to egg whites gradually while beating slowly or folding constantly until blended. Serves 8-10.
