RED TAPIOCA PUDDING 
1/2 c. quick-cooking tapioca
4 c. water and cherry juice
1 1/4 c. sugar
1/4 c. red cinnamon candies
2 1/2 c. canned red cherries, drained (juice reserved)
1/2 tsp. salt
2 tbsp. lemon juice
3 tbsp. butter
2 apples, thinly sliced

Combine tapioca, water and cherry juice, salt, sugar, butter and cinnamon candies. Cook over hot water until tapioca is clear. Add lemon juice and cherries. Mix thoroughly. Fill a well-oiled baking dish with alternate layer of tapioca mixture and apples. Cover. Bake in moderate oven (375 degrees) 45 minutes. Chill. Serve with cream if desired. Makes 8 servings.
