MICROWAVE TAPIOCA PUDDING | |
2 c. skim milk 2 eggs 1/4 c. sugar 1/4 c. quick cooking tapioca 1/4 tsp. salt 1 tsp. vanilla 2 tbsp. sugar 2 c. sliced fresh fruit Measure milk into a 4 cup glass measuring cup. Separate eggs. Add 1/4 cup sugar, tapioca, salt and egg yolks to milk. Blend, cook 6 minutes until bubbles, stir after 4 minutes. Beat egg whites, stir in sugar. Beat until foamy and peaks form. Add vanilla and fold in egg whites and cool. Spoon in fruit into parfait glasses. You can use strawberries or bananas and top with cooked mixture. |
