"TAPIOCA PUDDING" 
STEP I:

3 tbsp. minute tapioca
1/4 tsp. salt
3 tbsp. sugar
2 c. milk
2 egg yolk

STEP II:

2 egg whites, beaten
2 tbsp. sugar
1 tsp. vanilla

STEP III:

1 can pineapple, drained
Cool Whip

Mix tapioca, salt, sugar, milk and egg yolk together and let stand for 5 minutes. Then cook until full boil and seems to thicken. Take from heat and ad egg whites, sugar and vanilla. When this is cool add drained pineapple and Cool Whip.

I usually double this recipe. Also other drained fruit may be used for variation.
