HERBED LAMBURGERS 
1 lb. ground lamb
1 1/2 c. bread crumbs
1 beaten egg
2 tbsp. minced onion
1/4 tsp. cinnamon
1/4 tsp. ground cardamom
1 tbsp. ginger butter (unsalted butter with grated fresh ginger root mashed in)
1 tsp. salt
1/2 tsp. pepper
1 lg. clove minced garlic
1 tbsp. chopped chervil
2 tbsp. lemon juice
1/2 tsp. crushed mint, optional

Combine lamb, crumbs, salt, pepper and egg. Add herbs and spices and mix well. Form into burger patties and dot with the ginger butter. Place under the broiler until desired doneness. Serve with buttered noodles, yellow beans and spinach mushroom salad.
