GRANDMOTHER'S BUTTER CAKE WITH
CARAMEL ICING
 
1 c. butter
2 c. sugar
4 eggs
1 c. milk
3 c. flour
3 tsp. baking powder
1 tsp. vanilla
3 c. sugar, divided
3/4 c. milk
1 egg, beaten
1/2 c. butter, cut up
Pinch of salt

Cream butter and sugar. Add eggs; then milk, flour, baking powder and vanilla; beat well. Bake in tube pan at 350 degrees for 1 hour. Sprinkle 1/2 cup sugar in a heavy saucepan; cook, stirring constantly over medium heat until sugar melts and syrup is golden brown. Combine remaining sugar, milk, egg, salt and stir well. Add butter. Stir mixture into hot caramelized sugar (mixture may lump, but will become smooth with further cooking). Cook until candy thermometer reaches 230 degrees. Cool 5 minutes then beat with wooden spoon. Spread on cake.
