HAM SMOTHERED WITH SWEET
POTATOES
 
3 sweet potatoes
1 slice ham
2 tbsp. sugar
1 c. hot water

Boil potatoes until almost tender, peel and slice. Brown ham slightly on both sides in a skillet and place in a baking dish. Spread sliced sweet potatoes over ham and sprinkle with sugar. Add hot water to drippings in skillet and pour over ham and sweet potatoes; cover and bake in moderate oven, 350 degrees, until ham is tender. Baste occasionally with gravy; when ham is nearly tender remove lid and let top brown. Serves 3 or 4. Add 2 tart apples, peeled and sliced to sweet potatoes.
