DOUBLE QUICK DINNER ROLLS 
3/4 c. warm water
1 pkg. active dry yeast
1/4 c. sugar
1 tsp. salt
1 egg
1/4 c. soft shortening or butter
2 1/4 c. flour

Dissolve yeast in warm water in mixing bowl. Add salt, sugar, and half of the flour. Beat for 2 minutes. Add egg and shortening then gradually beat remaining flour until smooth. Let rise in bowl for 40- 50 minutes in warm place. Stir down batter and grease large muffin pans. Fill half full and let raise another 30 minuets until double in size. Bake at 425 degrees for 10-12 minutes.
