BANANA (NUT) BREAD 
1/2 c. canola butter
1/2 c. sugar
2 eggs
1 1/2 c. wheat flour
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt (optional)
4-6 med. ripe bananas
1/2 c. chopped walnuts (optional)

Cream together shortening and sugar; add eggs and beat well. Add dry ingredients and mix. Add bananas and mix well, add nuts. Pour into well greased 9 x 5 x 3 inch loaf pan. Preheat oven to 350 degrees. Bake 45-50 minutes or until done. Insert knife in center, when dry it's done. Remove from pan, cool and wrap. Great with butter (or) cream cheese.
