2 bunches parsley, washed and picked off stem 2 tomatoes, cubed small 1 bunch scallions 1 c. bulgar wheat 1/3 c. olive oil 2 tbsp. lemon juice Salt and pepper Put wheat in a bowl and cover with hot water. Let soak for about 30 minutes. In a food processor finely chop the parsley leaves and scallions. Seed and cube tomato. Drain and squeeze all water from wheat and mix with parsley, onion and tomato. Make dressing from oil and lemon juice. Mix well and chill a few hours before serving. |
