SWEET POTATO BAKE | |
2 egg whites 1 tsp. vanilla extract 2 tbsp. grated orange peel 2 lbs. sweet potatoes, peeled and cut in 1 inch pieces 2 tbsp. butter 3 tbsp. honey 1/2 tsp. cinnamon Cook potatoes in boiling water until tender, approximately 20 minutes. Drain then mash well. Mix in butter, vanilla, honey, orange peel and cinnamon, stir well and set aside. Spray a 2 quart casserole with Pam or Mazola. In a medium bowl beat egg whites until stiff. Fold egg whites into potatoes. Bake in preheated oven about 30 minutes or until puffed and brown. Yield: 4 servings - 215 calories. |
