Cucumbers 2 c. lime 5 c. sugar Vinegar Wash; cut cucumbers crosswise. To each gallon of cucumbers, add 2 cups lime dissolved in enough water to cover. Strain lime water. Add to cucumbers. Let stand 24 hours. Wash thoroughly in cold water; drain. Using 5 cups sugar to each quart vinegar. Mix together well and pour over cucumbers and let stand 24 hours. Cook for 45 minutes to 1 hour (slow boil). Put in jars and seal. Use enamel pan (for soaking). Put picking spices in a rag and let stand with sugar, vinegar and cucumbers. |
