RIB STEAKS WITH ROQUEFORT 
2 boneless rib steaks at 3/4 lb. each
2 tbsp. oil
1 tbsp. butter
2 tbsp. Roquefort cheese
Salt and pepper to taste

Rub steaks with oil and pan broil over very high heat 2 to 3 minutes on each side for rare. Or cook under the broiler. Cream butter and Roquefort together until well blended. When steaks are done, place on platter. Divide the butter - cheese mixture between the two, spreading over the meaty portion. Serves 2.
