CHUNKY TOMATO SAUCE 
2-3 lbs. tomatoes
1 bunch fresh basil or 2 tbsp. dried basil
2 bulbs fresh garlic, smashed
2-3 Spanish onions
4-6 bay leaves, broken (to release flavor)
2-4 tbsp. olive oil
2 (6 oz.) cans tomato paste
Water

2 to 3 pounds of fresh garden tomatoes or 1 can Italian tomatoes (2 lbs.).

1. Saute onion and garlic in olive oil until onions are transparent.

2. Add bay leaves and basil.

3. Add tomatoes, if using canned tomatoes, add 1 can of hot water.

4. Add tomato paste with 1 can each of hot water.

Simmer minimum of 2 hours more would be considerably better.
