CREAM OF ONION SOUP 
4 c. onion, sliced
4 tbsp. butter

Cook 20 minutes, slow, covered. Then 20 minutes uncovered, slow. Mix in:

1/2 c. flour
2 c. chicken stock

Combine:

3 cooked and mashed potatoes
1 qt. milk

Add to onion mixture. Salt and pepper to taste. Simmer 15 minutes. Serve with chopped parsley or chives on top.
