GLORIA'S BAKED CHICKEN AND RICE 
1 1/2 c. rice
1/2 c. celery
1 can cream of chicken soup
2 1/2 to 3 lb. chicken, cut up
2 tbsp. butter
1/2 c. (4 oz. can) mushrooms
2 tbsp. chopped onion
2 c. water
1 tsp. salt
Paprika and poultry seasoning

Preheat oven to 375 degrees. In 9x13 inch pan, combine uncooked rice, mushrooms, celery, onions, soup and water. Place chicken on rice, skin side up. Sprinkle with salt. Brush or drizzle chicken with the butter. Sprinkle with the paprika and poultry seasoning. Bake uncovered for 1 hour or until chicken is done. 7 servings of rice and 4 servings of chicken.
