EASY VEGETABLE BEEF BAKE 
1 lb. lean ground beef
1 can (16 oz.) tomatoes, cut or broken up
1 c. frozen corn
1 c. coarsely diced zucchini
1 c. uncooked reg. rice
1/2 c. water
1/4 c. sliced ripe olives, optional
1 env. (12/16 oz.) beef `n onions seasoning mix for rice
1 c. coarsely cubed Monterey Jack cheese (4-5 oz.)

Brown beef. Stir in tomatoes, corn, zucchini, rice, water, olives and seasonings mix. Heat to boiling. Spoon into 2 quart casserole. Bake, uncovered, at 350 degrees for 30 minutes, stirring after 20 minutes. Uncover and stir in cheese cubes. Bake, uncovered, 15-20 minutes or until rice is tender.
