SUNSHINE BAKED EGGS | |
10 to 12 large eggs 1 cup cottage cheese 1 (8 oz.) can crushed pineapple, drained 1/2 tsp. salt 1 to 2 tbsp. chopped fresh parsley, for garnish In large bowl lightly beat eggs. Add cheese, pineapple and seasoning. Bake in a 11x7x2-inch or 9x9-inch pan. Bake, uncovered, at 350°F for 40 to 45 minutes or until knife comes out clean when placed in center of casserole.
