BUTTER BEANS 
5 lb. butter beans, unshelled (approximately 3 1/2 lb. after shelled)
1/4 lb. fat back
4 c. water
2 tsp. sugar
2 tsp. butter
Salt and pepper to taste

Cook fatback in water with a little salt. Cook approximately 15 minutes, boiling hard. Reduce heat to medium and add butter beans. Cook 1/2 hour. Add 1 teaspoon sugar and cook another 1/2 hour. Add 2 teaspoons butter and cook 10 minutes.
