NANCY'S SPANISH RICE 
1 c. UNCLE BEN'S® rice
1/2 green pepper (chopped)
1/2 onion (chopped)
Ketchup or tomato sauce
Chicken broth (2 c.)
1 tbsp. oil

Heat oil in large (10 inch) fry pan. Add green pepper and onion and saute for a few minutes. Add rice and stir. Add ketchup or tomato sauce to taste, usually until it looks a nice even color.

Add 2 cups of chicken broth and dash of salt. Stir. Cover and simmer 40-45 minutes. Serves 8. Freezes well in tupperware container.
