RAISIN FILLED COOKIES 
1 c. sugar
1 egg
1/2 c. shortening
1/2 c. milk
2 tsp. cream of tartar
1 tsp. baking soda
1 tsp. salt
1 tsp. vanilla
3 1/2 c. flour

FILLING:

1 c. raisins, ground
1/2 c. water
1/2 c. sugar
1 tbsp. flour

Cream sugar, egg, shortening and vanilla. Add sifted flour, cream of tartar, soda and salt, alternately with milk. Mix well. Cover the dough with waxed paper and place in refrigerator to chill. Can be left overnight.

Filling: Mix ingredients; cook until thick.

Roll the cookie dough thin. Cut with cookie cutter and place on greased sheet. Put about 1 teaspoon of filling on each cookie. Cover with another cut cookie in which you have made a small slit. This allows steam to escape while the cookie is baking. With fingers press around edges of cookie to seal. Bake in 350 degree oven until browned.
