4 c. chopped Pippin apples 6 tbsp. apple jack or brandy 1 c. raisins 1 c. chopped walnuts or pecans 2 c. sugar 1/2 c. salad oil 2 eggs 2 c. flour 2 tsp. baking soda 1 tsp. salt 2 tsp. cinnamon 1 tsp. nutmeg 1/2 tsp. cloves Peel and chop apples, pour apple jack over, mix well, set aside. Stirring occasionally. Oil a 13 x 9 inch pan, dot with flour. Beat together eggs, sugar and oil. Sift together flour, salt and spices. Combine part flour mixture with apples, raisins and nuts. Combine the rest with egg-sugar mixture. Combine apple mixture with batter. Pour into pan. Bake at 350 degrees for 15 minutes. Bake at 325 degrees for 45 minutes or until done. |
