YIAYIA'S SPANIKOPITA 
2 lbs. spinach
1 lb. feta cheese, crumbled
8 eggs
1 bunch green onions
1 dry onion
1 lb. butter
1 lb. filo

Wash spinach, discard stems. Dry as thoroughly as possible on absorbent paper, then chop. Chop all onions finely and add to spinach. Add crumbled feta and eggs. Mix well.

In a 10x15 inch baking pan, line the bottom with 1 sheet of filo. Spread melted butter over it. Add another layer of filo and spread more of the butter. Continue this for 8 layers. Spread the spinach mixture. Repeat the filo/butter layers for 8 layers for the top. Bake at 375 degrees for 1 hour or until golden brown. Cut into squares and serve. Serves 12.
