2 1/2 c. all-purpose flour
2 c. sugar
1 tbsp. pumpkin pie spice
1 tsp. baking soda
1/2 tsp. salt
2 eggs, lightly beaten
1 c. solid pack pumpkin
1/2 c. vegetable oil
2 c. peeled, finely chopped apples
Chopped pecans

Combine dry ingredients. Combine eggs, pumpkin and oil. Add all together and stir in apples. Spoon into greased or paper muffin cups. Top with pecans. Bake at 350 degrees for 35-40 minutes. Serve to the little tunnel people while they listen to Classic Halloween tales!
