“QUICK CHOCOLATE EGGLESS CAKE” IS IN:

QUICK CHOCOLATE EGGLESS CAKE 
1-1/2 cup flour
1/3 cup cocoa powder
1 tsp. baking soda
1/2 tsp. salt
1 cup sugar
1/2 cup vegetable oil
1 cup cold water
2 tsp. vanilla extract
2 tsp. vinegar

Preheat oven to 375°F.

Spray a small baking pan (8x12) with vegetable spray or Baker's Joy.

Combine dry ingredients directly in the pan. Mix all the wet ingredients

In a small bowl, combine remaining ingredients leaving out the vinegar until the final step.

Combine wet and dry ingredients, stirring together in pan until well combined. Stir in the vinegar rapidly and immediately place pan into preheated oven and bake for 25 to 30 minutes.

Optional: You can stir in 1/2 cup semi-sweet chocolate chips just before baking to make a richer cake with melted chocolate bits or swirls.

For an eggless cake, this was excellent. I could not tell the difference between this and a cake with eggs - it was not too dense like other eggless cakes I have tried. I did add the choco chips and that really made it I think. I served it for dessert with a warmed raspberry sauce...DIVINE! Also easy to prepare.

Loved it! the cake came out amazing! I changed the flour to half whole meal and half white flour but it didn't change the taste or texture! My first eggless cake. :-)

Excellent airy, light chocolate cake really quick to mix and then bake. I used lemonade instead of water and I didn't do any mixing in the baking pan but in a bowl. Also I lined the bottom of the pan with baking paper as the sides of the pan were removable.

Really good for people sensitive to dairy and allergic to eggs (latter my husband)
